We are very pleased to announce Head Chef Michael Watson, once sous chef under the great Peter Meier, has returned to Casuarina Restaurant.
Michael began his apprenticeship at Peppers Guesthouse, Pokolbin in 1987 under chef Jean Marc Pollett. After he completed his apprenticeship, Michael joined Peter Meier’s team at Casuarina Restaurant in 1991. Michael stayed on with the team until the restaurant was sold in late 2000, he then moved on to become Head Chef at Noah’s on the Beach, one of Newcastle’s premier restaurants and function venues.
During Michael’s time at Casuarina, the restaurant was the finest establishment in the Hunter Valley, and the restaurant received the Restaurant-Catering Association Best Restaurant award in the years 1995, 1996, 1997, and 1998. Casuarina also was awarded American Express Best Restaurant in the Northern Region in 1990, 1996, 1997, 1998 and was inducted into the American Express Hall of Fame in 1999.
After success at Noah’s, Michael moved on to start his own business in 2007. The No. 13 Cafe & Gallery in Lorn, received the Best BYO Restaurant award in 2009. Following the success of his own business, Michael was asked to return to Noah’s to help run the hotel in Muswellbrook and return as Head Chef in Newcastle in 2011.
An opportunity for Michael to return to Casuarina in 2017, saw him return, now as Head Chef, to help bring back master chef Peter’s vision for Casuarina Restaurant. Head Chef Michael is proudly bringing back the amazing history of flambé cooking, coupled with an amazing menu of flavours, food, and wine. Enjoy flambé mains, classic desserts, and some entrées prepared table side.
